Elevate your Mother’s Day brunch by reinterpreting a old favourite,
Quail Eggs Florentine:

 

1. Slice, butter, and toast (or pan fry) mini rounds of brioche

2. Sauté spinach with onions and garlic

3. Pan fry teeny-tiny quail eggs

5. Sprinkle with fleur de sel and freshly ground pepper or drape with Hollandaise
